This has been my new go to breakfast lately. If you glance through my blog I’ve shared how much I love to meal prep. It helps my family stay on track for clean eating. Plus, it removes the stress and guess work out of meals. Ever since I came back from our trip I’ve been enjoying veggie platters for breakfast. It may sound like an odd choice, but I’ve wanted to increase my veggie intake. Starting my morning off with a salad has helped me focus on a healthy start for my day. Of course, it’s nice to change it up once in a while. These eggs are still within my diet and have been a nice change.
- 6 Hard Boiled Eggs
- 1/2 Avocado
- 1/2 Fresh Lemon
- 1 Tbsp. Yellow Mustard
- Onion powder
- Black Pepper
How to make the Deviled Breakfast Eggs
- Time to start shelling your eggs. Save the shells for your garden beds. 💮
- Add the yolk and half an avocado. Pulse until creamy.
- Scoop into a bowl and add lemon and mustard and stir. Add the additional spices to your taste.
- Fill as usual.
- Dust with some paprika and they are ready to enjoy. I store them in an air tight container and they last the week.
Since they store easily would it be wrong if I served them to guests? Hehe I’m not gonna tell them they weren’t made special for them 😉
Because they are delicious! And they’ll never know! I have them with a fruit salad and or my traditional veggies.
