This roasted red pepper chicken bake is very simple for a busy week day. Simply add ingredients into a baking dish, cover and let the oven take care of the rest 🙂
- 4-6 Chicken Breast
- 1/2 Roasted Red Peppers
- 2 Tbsp. Olive oil
- 1 Tbsp. Basil
- 1/2 tsp.. garlic
- salt & pepper
- 2-3 Stalks of Green Onion
How to make this simple roasted red pepper chicken bake.
- Pre heat oven to 375′ Add a couple tablespoons to your baking dish.
- Add chicken to the baking dish and seasoning (plus salt and pepper if desired). Top with half a jar of the roasted red peppers and chopped green onion stalks. This time mine was a garlic/red pepper combo. There are a bunch of different variations to change up the flavor!
- Cover and bake in a pre-heated oven approx. 40 minutes. Until juices run clear. I used the juices in the pan from the chicken/peppers to add a bit of flavor to our sweet potato cauliflower rice!
